These meatballs are very easy to make (as you can see), and I often take them to potluck suppers at church. After they are cooked, I put them into a crock pot and let them simmer in BBQ sauce or (2) packages instant brown gravy mix.
BBQ Meatballs
2 lbs. Enloe Farms ground beef J
¾ c. quick cooking oatmeal (or saltines)
¾ c. milk
1 egg
1 tsp. salt
½ tsp pepper
(optional) I also use 1-2 tsp. red pepper flakes, because "heat" is suppose to increase your metabolism.
Mix all ingredients.
In a second bowl, mix flour and seasonings. I don’t measure
this out, but I add salt, garlic powder, and pepper. (use whatever seasonings
you like)
I form the balls by using a cookie scoop, so they will be
uniform. Then I roll them in flour Make sure the ball is covered with flour, then
pick them up and roll them with your hands to compact the meatball.
Place them on a cookie sheet covered with foil.
Preheat oven to 350 degrees. Bake for 20 minutes.
This step is done however you prefer. I remove the meatballs from the cookie sheet and place them in a large bowl. Then I pour BBQ sauce (I use Sweet Baby Ray's brown sugar) over the meatballs and gently stir until all the meatballs are covered.
I pour them into a 9x13" cake pan and bake them for 10 minutes (at 350 degrees).
Or I place them in a crock pot to keep warm until ready to eat.
