Banana Split Cake

This cake is one of The Farmer's favorites. The first one I made when we were married. Actually, I believe it was a pie, and I began making it in a 9" x 13" pan.



Crust Ingredients:

2 c. graham crackers

1 stick melted butter or margarine

3 T. sugar (optional)

Crush graham crackers and mix with melted butter. Spread on the bottom of a 9" x 13" cake pan. Place into the frig.



Cake Ingredients:

2 eggs                                                                     3 cups bananas

3 cups powdered sugar                                   1 can crushed pineapple (drained)

2 sticks oleo (butter) :)                                    1-8oz. container whipped topping

optional: nuts or graham cracker crumbs to sprinkle on top for garnish

Mix eggs, powdered sugar, and butter together for first layer; beat 15 minutes. Spread over crust. Place bananas over first layer. Spread crushed pineapple over the bananas. Cover with the whipped topping. Chill for at least 1 hour.
